Nasi Lemak Rice

Nasi Lemak Rice! It's also known as Coconut rice, and it tastes superb with sambal chilli, fried chicken wings and fried egg.

Our very own Nasi Lemak

Ingredients
1 Grated Coconut
3 cups of White Rice
2 tablespoons of Salt
6 Pandan Leaves

Fresh Grated Coconut from market.

We managed to get freshly grated coconut from the wet market and it costs only $1.60! We didn't want to get those instant ones because you never know what kind of ingredients they add to keep the coconut 'fresh' on the shelves for months.

Soaking the Coconut in water

It's very easy to do!

Steps
1. Soak the grated coconut with 6 cups of water.
2. Squeeze and mix for 5 minutes.
3. Use the cloth strainer to squeeze out the fresh coconut milk.
4. Add it straight into the rice pot with Pandan leaves.
5. Cook for 20 minutes till fragrant.
6. Serve.

Notes
1. Never add water into the rice, after adding the coconut milk. It will reduce the fragrance of the rice.
2. Nasi Lemak Rice is fine if it's dry. Too wet will not make the nasi lemak rice tasty. Hence, 3 cups of rice requires 6 cups of coconut milk.
3. Wash the Pandan leaves thoroughly.
