Pancake Burgers

This dish is simply easy to make and delicious!!

Pancake Burgers!

Ingredients
1/2 cup brown rice flour
1/2 cup white flour
3 tbsp sugar
1 egg ( separate the yolk and egg white)
1 cup of cold milk
1 tbsp cooking oil

Steps
1. Whisk the flour together, and add sugar, egg yolk, cooking oil and cold milk together. Mix well.
2. Use a hand held mixer to fluff up the egg white.
3. Mix well and the pancake batter is ready to go!
4. Heat up oil and add a tablespoon of batter into the oil. You can do about six at a time.
5. Flip the mini pancakes after you feel it's okay.
6. You may add cheese on the pancakes as the filling in the pancake burgers! Enjoy!




I use a table spoon to make sure the pancakes are consistently small.


You may add more to the pan.

Fillers
You can get creative with the fillers that you want to have. Here are some suggestions:
1. Cheese
2. Maple syrup
3. Vegetables
4. Fruits
5. Chocolate Spread

Notes
1. Why do I add cold milk?
I have tried normal temperature milk before and it turned out that the pancakes doesn't have the crispy feeling. Cold milk always has the crisp to the pancakes!

2. Why do I add brown wheat rice flour?
It is much healthier. However, I have tried using 100% of it, but the pancakes turned out to be powdery! Hence I have decided the comfortable mix is 50-50.

Fried Silverfish

This dish is perfect for porridge, toppings on dishes, eat with bread etc. It is very versatile and the good news is that my children love it too!

You can get small fresh silverfish from wet markets and it costs around $2-$3 a packet.

Ingredients
Silverfish
Cooking oil
Garlic

Steps
1. Soak the silverfish in cool water for about 20 minutes. This is to remove the excess salt in the silverfish.
2. Dry the silverfish with kitchen papers.
3. Heat the cooking oil at medium high and place the damp silverfish with garlic into the pot.
4. After 7-8minutes, the silverfish will become brownish and you can take them up.
5. Place on kitchen papers to absorb any excess oil.
6. Serve.

Keeping
You can keep them in air tight glass bottles or plastic containers. This is to keep them crispy.
